This is just a thought. Nitrate is the bi-product of ammonia and nitrite. So more fish waste causes more ammonia, which turns into more nitrate.... So I'm wondering if by using ammonia remover would lower nitrate, since its lowering the amount of ammonia in the water.

zeolite absorbs ammonia in freshwater. for salt water, look for nitrate sponge.

most ammonia removal systems are chemical based, definately not the most natral
way to go about it, but valid question just the same. have u given any thought to the nitates & tites that are still in the system, cause if u all of a sudden starved it of ammonia would the bacterial collonies die back after the existing conversion has exhausted itself.?
